About the winery

ZÁMECKÉ VINAŘSTVÍ BZENEC s.r.o. supplies quality quiet Moravian wines to the domestic and foreign market. Emphasis is placed on varietal characteristics, technological purity and modern expression of all produced wines. It offers wines with a unique and unmistakable varietal taste and aroma, which come from grapes with guaranteed origin of the Morava wine region, from selected wine-growing villages of three sub-regions: Mikulovská, Slovenská, Znojmo. For the production of original Moravian wines today, the Bzenec Chateau Winery uses the most modern winemaking technologies. Using controlled fermentation technology combined with a distinctive approach, it produces wines of the highest quality that have their own "soul". THE DECORATIVE CELLAR The beautiful historical premises of the castle cellar directly encouraged to think about how to use the potential of the intricate corridors and beautiful corners. Now we have a new tasting room, which we have placed in one of the most beautiful rooms of the cellar. Original walls and vaults, solid oak furniture and elegant lighting. Thanks to which there is a perfect combination and architectural harmony.

Our philosophy "EVERY DETAIL MATTERS"

In the vineyard
It all starts with the careful selection of the vineyard site. When planting, we insist on choosing the right variety and the best clone. Each individual seedling, planted by machine, is then hand tamped. The green work in the vineyard is marked by manual labour, for example, we very carefully break off every leaf that unnecessarily weakens the plant. We carefully consider the harvest date and try to delay it as long as possible for the desired ripeness of the grapes. We do not delay the harvest itself and transport the grapes as quickly as possible for processing. We insist on this.

Cellar
In the cellar we give the wine time, it is in the cellar until we are 100% satisfied. We use wines from different stages of grape ripeness at harvest, different types of training, different second vessel materials, different barrel sizes, different producers, and different degrees of barrel firing when we put the wines together. We endlessly select the most appropriate combination of proportions from these wines to get the best result for a given range of wines.

Achievements
These motivate us to do things even better. We enjoy pushing our limits, proving the impossible. For a long time, we were not internally satisfied with our idea of the perfect red wine. We set out to change that and succeeded in being a champion with EGO No. 90 Pinot No. 90 Pinot No. 90 Pinot No. 90 Pinot Blue Barrique. We also wanted to start making interesting and long-lived wines on barrel, and we succeeded with the EGO No. 79 Chardonnay barrique 2019. Competitions make us happy, but they are even more important to us in strengthening our desire to do even better next time, or to score in another category next time. And they also give us a clue as to what customers might like in the market.

Design
We endlessly discuss more and more versions and "sub versions" of graphic designs, design visions and ideas. We grill all of them thoroughly, perhaps from all sides, doing research among our colleagues to see which version appeals to whom. We discuss ideas in a wider circle and have a desire to find the best one.

Tasting
When we do tastings for customers, we choose the wines, varieties, vintages and tasting themes very carefully. We then rank the selected wines in the most appropriate order for tasting before the event, which is to let each individual sample stand out, the next sample must not degrade the previous one and must let the next one stand out. It is not easy to build a tasting with us.

Vineyard "Under the Old Castle"
In the reconstruction of the line, we started by levelling the uneven terrain, recovering the washed-out topsoil, reconstructing the walls, terraces, wells and the generous concept of the staircase. The planting of the vines was done traditionally with acacia stakes and partly with "head" lines. We have also very carefully selected clones of the planted varieties, which belong to the Bzenecko region - Riesling, Pinot Noir, Chardonnay and Pinot Gris, but also very rare varieties that are no longer grown. We had to grow these from loops found all over Europe - e.g. Red Spice, Inkwell, Bouquet Riesling, Kadarka, etc. These are planted in single rows, like an experiential vineyard. Here too, it was very important for us that the current appearance of the reconstructed line reflects its historical significance as one of the oldest vineyard lines in the Czech Republic and also the emotional relationship that the Bzenč people themselves have with Starák.

Adjustment
We insist on the perfect connection between the wine, packaging, label and the overall wine tasting experience. We are obsessed with design. Starting with the bottle, its appropriate choice according to the focus of the wine line or a particular variety is very important. The label is the proverbial gold brooch on a perfectly fitting dress. It must be sexy, modern, tasteful and its contents must tell a story. We insist on using premium materials and printing technologies.

Logo
Its complexity and titular details are no accident. Our logo also tells our story. A proud story of beauty, elegance, refinement and "nobility". Peacocks, which refer to the castle park, decorate the shield as a symbol of pride in our work, the crown as a symbol of our achievements and the year 1873, when the first classical sect was founded in the Czech lands, to which we subscribe.

Architecture
An example is the reconstruction of the cellar in Bzenec. The floors are made of the same material that is supplied for the streets in Venice. The interior of the cellar (tasting room) and other modifications are made by the renowned architect Štěpán Marek, who has done many sacral realisations and other reconstructions and is a highly respected architect. A detail, but important to us, is for example the round table with its own thigh heating.

Events
We just do them differently. Innovative, generous, superior, novel, inspiring, progressive. Programmatically, we avoid established wine clichés. It is important for us that the visitor feels much better than at other events, feels the difference. To leave with the feeling that we have done something new, something they have never experienced anywhere else, and that it was great.
