About the winery

VINAŘSTVÍ ŠABATA s.r.o. (2010) in the first phase focused on building a new operation on the site of a former quarry on the outskirts of the municipality. Zaječí. After the building was approved (2011), the same year the processing of grapes from the vineyards of the Přítlucká Mountain - 292 m above sea level and the municipalities of Rakvice, Přítluky, Zaječí and Milovice began. The company was founded as a natural successor of a small family winery and currently its employees are father and two sons Šabat. The winery runs year-round tasting and sightseeing programs.

The newly built winery is located on the edge of the commune. Zaječí at the III. class road 0,5 km from the village Přítluky.

The modern winery was founded quite recently on the initiative of Ing. Vladimír Šabata, who at first alone and then with his sons farmed several cellars in Zaječí. He began to realize his long-term vision gradually - first by purchasing a suitable plot of land in a former quarry above the road from Zaječí to Přítluky. Together with the Slovak wine lover Ing. Ivan Beneš, he decided to invest in the construction and equipment of a new winery. It combines a practically divided production and storage area, administrative facilities and presentation areas. The building, built on an area of 1080 m2, uses the terrain profile and is covered with soil on all sides (except for the roof terrace and the front wall with the reception bath), which guarantees minimal temperature fluctuations in operation and reduces cooling or heating costs. The first vintage took place in the new winery in 2011. In the future, it is gathering breath towards a target capacity of around 100,000 litres. Thanks to state-of-the-art technology, Ing. Šabata together with his sons Václav and Jan are able to manage the entire chain from working with the winegrowers and buying the grapes to the distribution of the wine to the end customers without additional employees. The production process uses conventional de-stemming, a closed pneumatic press, decanting tanks, tanks with cooling and heating capabilities and a new filling line. Bottled red wines are produced only as single bottles. An elegantly furnished tasting room, directly connected to the cellar, is used for the presentation of the wines. There is also a sales gallery of regional artists. Wine tastings accompanied by a tour of the production facilities are always conducted by the Šabat winemakers themselves.
