About the winery

The roots of the current Spěvák family winery date back to the 1930s. Father František's small-scale winemaking gradually grew, but from the 1970s until 1999 the winery produced only cask wines. This changed with the arrival of a new generation represented by Milan Spěvák, who continued the tradition with new ambitions. We began to focus on bottled, quality and attribute wines and in 2001 we expanded our production and storage facilities in a historic cellar that is more than a hundred years old.

Milan Spěvák turned his original hobby into a profession in 2008.Since the 2012 vintage, the winery has been located in a brand new, modern building and in 2015 a new quilted representative cellar with a capacity of 50 people was opened. The family now farms 10 hectares of vineyards in the Bílovice tracks on black earth and clay soils. From the last plantings in 2009, 2013 and 2014 the range was enriched by Pálava, Muscat of Moravia, Muscat Yellow and Solaris. Tramín and Děvín were planted. Some of the raw materials come from purchases from the winegrowers of Velké Bílovice The varietal composition is focused on Pinot Gris, Chardonnay, Sauvignon, Riesling, Traminer, Pinot Noir, Franconia, Zweigeltrebe and Dornfelder. Family members and friends help with the hand harvest. For the white varieties we use gentle pressing on a pneumatic press, controlled fermentation and noble yeasts. For red wines, the winery has embarked on a new way of producing fruit wines, which we ferment traditionally in vats and store in stainless steel tanks and, for a few months, in barrels. At tastings, it is possible to choose from a wide range of around 26-31 varieties.
