The technologist and enologist of the company is Ing. Adam Bednář. All grape production is processed with high quality and gentle technology. In the production of red wine, the winery returns to traditional methods - it uses longer maceration (leavening) of the mash. White wines are produced by controlled fermentation using tertiary yeasts. Thanks to this combination, the winery produces wine that bears the characteristic varietal traits and aromas while retaining its distinctive terroir.
The cellar is located next to the hotel Kraví hora.
The family winery manages 32 ha of vineyards in the Terasy, Čtvrtě and Kraví hora vineyards. The headquarters of the winery in Bořetice is the historic premises of the First Republic wine cooperative VINOPA, which was built in 1932 and completely renovated in 2005, while preserving the original appearance of the main building. The closed set of production, storage and presentation facilities is one of the most modern in the country and is internationally comparable in its category.
