About the winery

The story of the winery began in 2012 in the cellar of the great-grandfather after whom the winery was named. We produce wine in Velké Pavlovice, which is part of the micro-region called the Blue Mountains. In our production we emphasize that each vintage should reflect what Mother Nature has produced. But most of all, we do our work with love, and we dare say that this is what is most important in the production of wines. You can taste our wines in three establishments - the wine cellar Pod Křížkem, the café Knoll: for coffee & a cup in Lednice and the Stone Cellar in Velké Pavlovice.

I come from two winemaking families. Both my great-grandfathers and grandfathers had small wineries that served them for a small income and primarily for their own use. Winemaking was a tradition for my grandparents, but mostly a love.

I started the winery in 2012 with a friend. Back then, as young boys, we started to gather experience from our fathers and grandfathers. The memories of our beginnings are smiling. Like all budding winemakers, we only owned a hoe, a few rows of vineyards and a small cellar that my grandfather Peter gave me. Nowadays we are both working independently on our own wineries. Growing and making wine gives us great joy and we are happy to be able to create something in life that we enjoy and find fulfilling.

Our vignette and the name of the winery, KNOLL, is derived from the original cellar that my grandfather Peter gave me. The cellar was built by my great-grandfather Franz Knoll, who passed it on to my grandfather, who in turn passed it on to me. My wish was that the vignette and the name of the winery would be a reference to this cellar and be a reminder of the beautiful but sometimes challenging beginnings of my winemaking journey. In 2022, my friend Petra joined me and together we renovated and opened the Knoll café/winery: for coffee & cuppa in Lednice near the chateau with the idea of combining wine, fine coffee and quality products from the surrounding area.

Currently we are fully dedicated to three different establishments where you can taste our wines. Namely Velke Pavlovice in the newly renovated Stone Cellar, the original wine cellar Pod Křížkem in Lednice and the Knoll café: for coffee & a cup in Lednice.
