The grapes for the production of wine come from four hectares of our own vineyards in the Kozí horky area and partly from vineyards in the adjacent villages. Most of the own vineyards were planted after 2003, with two hectares added in the last two years. The winery focuses on wines with a strong varietal character and bottle ageing prospects, which is also reflected in the production technology. The grapes are processed in a surface hall on modern, environmentally friendly equipment, and the musts are fermented with pure yeast cultures. The white musts are cooled during fermentation to temperatures of 14-16 °C. The red musts are kept at a fermentation temperature of no more than 30 °C after several days of cold maceration. After fermentation, the young wines are aged in stainless steel tanks and selected lots are aged in wooden barrels. About a third of the annual production is bottled, with a production capacity of around 100 000 litres per year. The winery offers quality dry wines, fresh young wines and full-bodied, harmonious wines suitable for archiving. The wines are sold by agreement from the cellar, appearing in wine shops, restaurants and hotels. Recently, the winery has acquired modern mechanization for the vineyards, increased production capacity and modernized technological equipment for grape processing (new pneumatic press) and fermentation of the mash (stainless steel vinifiers).
