About winemaker

Small exclusive winery Ing. Vlastislav Klobasa was established around 2000 by a gradual transformation from a hobby into a business activity. Although the winemaker did not take over the imaginary family scepter of winemaking, he continued the legacy of his ancestors and peasant family traditions through his love for the land and nature. The basis of the winery's prestige is a two-hectare vineyard in the Neuperk area of Nikolčice. The well-chosen plot at an altitude of approximately 350 metres above sea level with a south-westerly orientation and a loess soil with a high calcium content has a unique microclimate. Warm air from the boiler from the Hustopeč ponds flows through the vineyard and heats the grapes on the vines to high quality attributes. Vlastislav Klobása moved the cellar farm from Mikulovsko to Nikolčice in 2012 to the wine yard, which he is gradually reconstructing. He applies a healthy degree of rusticity to wine production and follows unchanging rules - for example, for blue grapes he risks the latest possible harvest and red wines are thus only labelled as a selection of grapes. If the starting material does not meet this quality, for example because of a poor vintage and unsuitable weather, rosés are 'only' made as late harvests. This principle is the cellar master's answer to the general doubts about Moravian red wines. Other technologies correspond to the idea of a modern small winery - experiments with own yeasts, cooling of white musts, stainless steel tanks and barriques. The wines are sold from the cellar, in selected gastronomic establishments and wine shops, mainly in the Zlín region. Tastings for small groups of up to ten people directly in the vineyard are a specialty. Vlastislav Klobása prefers a more chamber-like composition also for tastings in the cellar. The wine house in Nikolčice is still waiting for further renovations, which will include the creation of accommodation in two rooms for loyal customers next year.

Basic characteristics of wine

Pálava was cultivated by Ing. Josef Veverka by crossing the varieties Gewürztraminer and Müller Thurgau. Probably the best results are achieved mainly in the Mikulov subregion, in the vicinity of the municipalities of Perná, Pavlov or Bulhary, then in Lechovice, Popice or Čejkovice. Pálava is often automatically perceived as a sweet wine, i.e. with a higher residual sugar but this is not always the rule. In the dry version we discover the charm and beauty of this variety.
