Theoretical part
- Appearance, aroma and taste characteristics of wines - variations and balances
- Conditions and methods of sensory evaluation
- Variety and winemaking art - sensory diversity of Moravian and Czech wines
Practical part
- Repeat test of the ability to distinguish selected tastes and aromas
- Exercise of long-term sensory memory of wines
- Test of the ability to distinguish between wines
- Test of short-term memory of wines
- Determination of the aroma profile and the robustness profile of selected types of wines
- Identification of a defect or disease in wine
- Practical application of the international 100-point OIV assessment
Afternoon programme (15:00-17:00)
Visit to the wine tasting exhibition of the Wine Salon of the Czech Republic
- Individual study in the Wine Salon - tasting in the scope of the program A1 - Free tasting (399 CZK - included in the course fee) with extended tasting time of 2 hours.
- possibility of tasting the current collection of Salon wines (except sparkling wines and special selections)
- entrance only on the day of the course upon presentation of the certificate of completion
(Note: In the Wine Salon, one bottle of each wine is open. Detailed information about each wine is available on each wine's presentation box and in the catalogue. During the tasting, a sommelier is available to give visitors information about the wine and each winery upon request.) This training can be a good precursor to other professional courses, such as the training and selection of specialist expert assessors for sensory analysis of wines according to ISO 8586, organised by the National Wine Centre.
