The winery U Kostela Polešovice became known to all lovers, admirers and friends of the delicious drink in 2011. From the very beginning, their philosophy has been to bring wines into the world with tenderness, to pamper them during their youth and to strengthen their character as they mature so that the love put into them influences our customers and they fall in love with them forever and without reservation.
The first written mention of this winery dates back to 1220. At that time, the village belonged to the newly founded Cistercian monastery at Velehrad. Already in its early days, the monks established vineyards and grew many grape varieties. The earliest documented mention of Polešovice viticulture dates back to 1454. It is no coincidence that a grape can be seen on the coat of arms of Polešovice. At present, the winery owns about 49 hectares of vineyards, from which, however, it supplies most of its production to a number of wineries. Only selected grapes from the best locations are processed in the winery in limited batches of premium wines. The winery also cooperates with several first-class grape growers from the surrounding area, which guarantees the first-class quality of hand-harvested grapes from the best vineyards in the municipalities of Polešovice, Ořechov, Boršice and Moravská Nová Ves. The varietal composition of the winery is quite wide. High quality wines are produced from all varieties of the Ruland and Riesling families. One cannot forget the Muscat of Moravia, which owes its origin to the breeding station in Polešovice. The winery produces red wines mainly from the Zweigeltrebe, Cabernet Sauvignon, Frankovka and Dornfelder varieties.
Last but not least, the winery also deals with coupage and the production of various cuvées. The proportion of white varieties to blue varieties is represented by 70% : 30%.
In 2011-2012, the winery invested mainly in the modernisation of its wine production technology to meet the high demands of modern and sensitive production. Investments have been made mainly in controlled fermentation technology, press, vinifier, stainless steel storage tanks, wooden barrels, barriques, etc.
