About winemaker

The ŠOMAM Winery is a family winery founded on 9.9.1999, located in the village of Dolní Dunajovice. The company manages 8 hectares of vineyards with an annual production of 30 000 litres of wine. All the varieties are planted in the vineyard "Plotny" on medium heavy clay soils with south-eastern exposure and are cultivated with emphasis on gentle agrotechnics and a large proportion of manual work! The basic philosophy of the company is to produce young, as natural as possible, high quality appellation wines with the typical varietal character and freshness of the wines of the Mikulov wine sub-region. The aim is to continue the old and rich wine-making traditions in harmony with the use of modern technology. The company's specialty is a wide range of white and red wines. The grapes are processed immediately after harvesting, without fermentation into mash, with decanting of the must using pure yeast cultures and subsequent controlled fermentation. The red wines are biologically de-acidified by malolactic fermentation and then stored in oak barrels. After racking, the wines are aged in the cellar and marketed according to the customer's needs.

Basic characteristics of wine

Pálava was cultivated by Ing. Josef Veverka by crossing the varieties Gewürztraminer and Müller Thurgau. Probably the best results are achieved mainly in the Mikulov subregion, in the vicinity of the municipalities of Perná, Pavlov or Bulhary, then in Lechovice, Popice or Čejkovice. Pálava is often automatically perceived as a sweet wine, i.e. with a higher residual sugar but this is not always the rule. In the dry version we discover the charm and beauty of this variety.
