The winemaking tradition in the Matul family dates back to the middle of the 20th century. The current owner of the winery, Zdeněk Matula, who graduated from the wine school in Valtice, is also faithful to it. The whole family is involved in the development of the winery, which farms 3 hectares of vineyards with a varied composition of varieties. Their vineyards are spread out on the slopes around Dolní Dunajovice. The work around wine accompanies the family members throughout their lives. Even with all the hard work, it is also fun and relaxing for them, although all the family members manage wine production in their own jobs. The wines come mainly from their own vineyards, which are managed under the integrated production system. The Matuls are careful not to overload the vines with high yields at the expense of the quality of the wines produced. Their diligence is rewarded with healthy grapes, which are gently transported in the shortest possible time during the harvest and processed using modern technology. This consists of eliminating the access of air during the entire process of processing the grapes, de-waxing the musts pressed in the press and fermenting them with a pure yeast culture. Fermentation takes place at a low controlled temperature in stainless steel vessels. The interplay of all these aspects preserves the typical varietal character of their wines. They produce wines with a natural, authentic flavour, which are characterised by the distinctive and original minerality of the terroir of the famous vineyards of Dunajovický Kopec, Zimní vrch and Mlýnská.
