About the winery

The protected area of the Pálava Hills is the last outcrop of the limestone Alps and has been inscribed on the UNESCO list of reserves for its biospheric uniqueness. The unique limestone bedrock limits the growth of the vines and concentrates them, giving the wines from the Pavlov Winery a unique character of great spiciness, spiciness and density. It produces wines with high minerality, with a distinctive fruity character, with strong honey notes.

The area of the protected landscape area is one of the driest and warmest areas of the country with regard to the average annual temperature (Pálava - from the word burning). There are sometimes very dry periods throughout the year, which not only does not bother the vines at the time of berry set and grape ripening, but is ideal for the quality of the wine. The wine-growing village of Pavlov, which gained the distinction of being an important wine-growing centre in the Middle Ages, is distinguished, among other things, by the unique architecture of its Baroque wine houses. The Pavlov Winery itself lies right in the heart of Pavlov and was built by linking three cellar farms. According to surviving sources, it bears the year 1897 in its name. The total length of the cellars is an incredible 250 m. In the Pavlov winery you will find only small fermentation vessels of 2 to 6,400 litres. As a result, each batch of wine has unique conditions to preserve the terroir. The Pavlov winery focuses only on white varieties. The Pavlov winery farms 195 hectares of its own vineyards, mostly in the municipalities surrounding Pavlov. Sahara, Pod Pannama, Pod Pálavou, Slunný vrch, U Božích muk, Na výsluní Flagship wine.
