Moravský sklepmistr is the name and trademark of the winery of Milan Pavelka. He founded the wine company in this form with his father Jan in 1994. Both Pavelkas are graduates of the secondary wine school in Valtice. Jan Pavelka went through Moravian Wine Plants, Pálava Agricultural Company and Víno Lípa company in Mikulov in his rich experience. In 1992 he became independent and now the main reins of the family winery are held by his son Milan. Two permanent employees work in the company, with temporary workers helping out with seasonal work. The winery farms 11 hectares of vineyards, most of which are located in the Strážný vrch area. The Pavelkas gradually bought most of the vineyards, and planted less than 2 ha themselves. Some of the grapes are still purchased from vine growers in the immediate area - in addition to the production of around 7,000 bottles of wine per year, the production of wine distributed in barrel form is still significantly predominant. The winery is divided into three cellars and two above-ground cellars. The winery uses modern methods of grape processing, especially controlled fermentation, destemming and vinification. The wines are aged exclusively in stainless steel tanks and are marketed as young in the year following the harvest. For simplicity, the winery keeps them in the category of earthy. In addition to sales from the cellar, Milan Pavelka relies mainly on his own delivery service, which takes the wines to shops and wine shops around the country. Small groups of no more than fifteen visitors can come to Milovice for tastings.
